Mint Chocolate Oreo Cake

For the cake:

3/4 cup of unsalted and room temperature butter
1 1/2 cups of sugar
5 large eggs at room temperature
2 1/2 cups of cake flour
2 tsp baking powder
1/4 tsp salt
1 cup of milk (I use whole)
1 tbs of vanilla

*Cream butter and sugar together until fluffy (about 2-4 minutes on medium speed)
*Add eggs one at a time, beating on low speed
*Add the dry ingredients together in a bowl and alternate adding the dry ingredients and the milk with the vanilla extract added to it on low speed so mixture doesn’t fly everywhere.
*Then do a final mix on medium speed to ensure it’s incorporated.

Bake at 350F for about 40 minutes – an hour or until you insert a toothpick in it and it comes out clean. (I bake in two different 6 inch pans and layer them, but if you use an 8 inch, you’ll have to it for the layers and bake longer).

For the chocolate buttercream layers:

1 stick (1/2 cup) of unsalted room temperature butter
2/3 cup of cocoa powder
1 tbs milk
2 cups confectioner’s sugar

*Mix butter and cocoa
*Slowly add in sugar and mix until well-beaten
*Add milk *if it’s too stiff, add more, it’s it just right, you can skip the milk

For the mint Oreo buttercream

About ten Oreos crushed in a food processor
2 sticks of unsalted room temperature butter
1 tbs milk
2 cups confectioner’s sugar

2 tsp of mint extract

*Mix butter
*Slowly add in sugar and mix until well-beaten. Add mint extract.
*Add milk *if it’s too stiff, add more, it’s it just right, you can skip the milk

Chocolate ganache to top it off:

1/2 cup of heavy cream
1/2 cup semi sweet chocolate chips

Boil heavy cream over medium heat. Once it comes to an immediate boil, pour the heavy cream over a bowl of chocolate chips. Stir until fully incorporated. If you find that it doesn’t melt fully, you can always use the double boiler method. I just prefer this way for myself 😉

  1. Oh now I see it’s me who missed details on baking pan earlier- is it okay to assume you meant to write “slice” in between “to and it” up there..
    Can the oreos be crushed in a blender? Though it doesn’t say at what point the crushed Oreos go in


    1. Yes, that’s two 6 inch baking pans and then layered with the chocolate in between. The mint Oreo buttercream-yes, you may use a blender and it’ll work just as well! I add the Oreos at the very end. So after everything is mixed with the paddle attachment mixer, I add the crushed Oreos and I mix it in by hand with a spatula. Because sometimes if I’ve mixed it within the mixing bowl, it gets too blended.
